Sweet and tender roasted sweet potatoes with lemony, sweet and tart pan roasted apples were like many holiday flavors singing on my palate. This delicious sweet side dish is as simple as it looks and as delicious as it sounds. I love to pair this with roasted or grilled lamb.

Recipe Roasted Sweet Potatoes with Apple

If you are already planning to roast lamb or turkey, this side dish will cook at same temperature, so you can roast both dishes at the same time and save yourself on time and energy. I adapted this recipe from Fine Cooking Magazine - Roasting Issue and tweaked it per my taste and liking. Original recipe calls for 2 tbsp of butter and maple syrup but I have used 1 tbsp butter and honey instead of maple. This recipe s very forgiving, so get creative, use maple instead of honey or sweet mayor lemons instead of regular lemons and enjoy!!

  • Step for Recipe - Roasted Sweet Potatoes with Apple 1. Preheat oven at 475 Fahrenheit. Cut the sweet potatoes into long slightly thick wedges. Drizzle 1 tbsp olive oil, fresh pepper and 1/2 tsp salt, spread on a sheet in single layer. Roast for 10 minutes, take out, flip and then again roast till tender (about 6-8 minutes)
  • Step for Recipe - Roasted Sweet Potatoes with Apple 2. In meantime, heat butter in a skillet, when butter has melted, place apple wedges in the pan in a single layer and let'em brown on both sides for about 2 minutes each side. Remove from heat.
  • Step for Recipe - Roasted Sweet Potatoes with Apple 3. In a bowl, add lemon juice, sage, honey, and mix well. Add in the roasted sweet potatoes, apples and toss gently with spatula. Transfer to a serving platter and season with salt and fresh cracked pepper per taste, serve and enjoy!
