What not to like when a bowl of soup welcomes you on a cold winter day? And if soup is vegetarian and healthy yet filling to solve the purpose of an easy homemade dinner?! I would say - "Even Better!"
Even though we eat meat, vegetarian cuisine is big part of our weekly menu. There are many days in week when we can only eat vegetarian. On those days, especially when weather in not that warm... I jump at the opportunity of serving some delicious homemade soup and bread for dinner.
So to speak, my better-half only likes less-chunky and more smooth soups. So I often add-in ingredients which will make soup filling yet will not require annoying (as per Vishal ;)) munching. One benefit, however, is that these lite and smooth soups are best to accompany with a rustic bread to scoop even the last half-teaspoon left in the bowl. What do you say?
All of these soups are pure vegetarian. Mostly, I use just homemade vegetable stock or water. If recipe calls for chicken stock anywhere, feel free to replace with low-sodium vegetable stock. If you wish to make stock at home, I have an easy recipe here.
So, ditch the delivery and also ditch the pile of cans in pantry. Instead grab ingredients from refrigerator and let's serve some healthy soup for dinner!
