Chickpea is clean base ingredient which you can blend to make gluten-free, delicious and healthy sides. Hummus, a delicious Mediterranean chickpea based dip, is my favorite way to enjoy and serve chickpeas to my guests. But I always flavor my hummus dip to make even more delicious and spicy.

Last year, I shared with you Masala hummus, today I have added I more (my other dip favorite) ingredient to make hummus extra special i.e. Fresh Cilantro. If you are Chickpea Hummus fan, Cilantro Hummus will be your new favorite. I tasted cilantro hummus first time in Luna Grill, a local Middle East Fast food joint and loved it in first bite. To make Hummus exciting, cilantro is the way to go. Fresh cilantro adds lots of freshness and bite to nutty, garlicky, lemony chickpea hummus. I would call it - A great gift for Hummus Lovers.

Chickpeas are readily available dried or cooked and canned. If using canned chickpeas, you can make delicious dips with chickpeas in no time, but I have to tell you that fresh cooked chickpeas have even better taste and quality. Even though recipe calls for canned chickpeas, if you have time, take time to soak the chickpeas, a night before cooking'em. Next day, boil chickpeas in salted water until tender and use in dips of you choice. You will notice a great deal of difference in quality and taste and it is economical too.

  • 1. In a blender, combine rinsed chickpeas, rough chopped cilantro, salt, cumin powder, pepper, garlic, tahini paste, lemon juice and zest. With blender running slowly add 2 tbsp olive oil until chickpeas and cilantro are smooth and well combined. (add additional 1 tbsp more olive oil if mixture is difficult to combine). Garnish with few fresh leaves of cilantro, 1-2 tbsp fresh olive oil (optional) and serve with side of toasted pita bread. Enjoy!!
