Masala Pasta in Spiced Tikka Masala Sauce

View Recipe
Tikka Masala is most loved, easy to prepare and delicious tasting gravy in Indian Cuisine. Few days back, I made Lychee Paneer Tikka Masala and got lucky to have some masala gravy leftover. I saw this Masala Pasta in menu of an Indian Restaurant once, since then it was sparking my mind to try at home. Masala gravy leftovers just added the fuel on spark and I made Masala Pasta for lunch!! Sharing with you easy, yet so-so scrumptious, mild spiced, creamy and tangy penne variety pasta in masala sauce. Y U M M Y party in mouth!!

Tikka Masala is made various ways in different parts of the world and people often confuse the Tikka Masala with Indian Butter Chicken. If you ever need to remember what Tikka Masala looks like, just remember [to pin this recipe :) j/k] that Tikka Masala is a tomatoes based gravy specially prepared to accompany Tikkas (Tandoori Marinated Chicken or Paneer). Remove spices, and onion, this gravy will remind you of Italian Tomato Cream Sauce (with little less cream).

One little trick!! Do you know how to make the tomato cream sauce? Then, just saute some onion, garlic and ginger and add spices mentioned in this recipe. That’s it! You have it!! The perfect Indian Tikka Masala Sauce ever. I guarantee, you will never order or buy packet of Tikka Masala Sauce again.

And if you get lucky to save some gravy left-overs, top it on Pasta for lunch next day. Perfectly al-dante pasta with sweet and spicy, creamy and luxurious Tikka Masala Gravy will be great to wow your friends and family. It is great news for Italian and Indian food lovers. This fusion pasta will win you lot of praise in your next get-together.

Ingredients

  • 2 Cup Tomato Sauce (I often use Marinara Sauce. You can use canned diced tomatoes)
  • 1/2 tsp Garam Masala
  • 1 lbs Pasta (Penne or Other Tube Pasta)
  • 1 Cup Lychee(Litchi) (Optional - I used Lychee Tikka Masala leftover which had lychees, you can totally leave this for Masala Pasta)
  • 2-3 tbsp Honey
  • 2 tbsp Heavy Cream
  • 2 tbsp Unsalted Butter
  • 1/2 White Onion (thin moon slices of 1 medium size or 1/2 large onion)
  • 2-3 tbsp Basil (fresh basil leaves chopped)
  • 1/4 Cup Parmesan Cheese
  • 1 tbsp Ginger Garlic Paste
  • 1/2 tsp Red Pepper Powder
  • 1 tsp Salt

Directions

  • 1. Heat butter in a pan, when melted, add garam masala and cook until fragrant (30-40 secs). Now add sliced onion, ginger and garlic and saute for 2-3 minutes till onions are slightly soft. Don't let garlic burn.
  • 2. Add tomato sauce, water, salt, pepper , honey. Mix well and bring to boil on high heat. Reduce heat to medium low and let it cook for 10-12 minutes until sauce gets signature deep red color.
  • 3. In meantime, cook pasta in salted water as per package directions. Drain pasta water. Transfer pasta to serving bowls. Top with Tikka Masala Sauce, grated parmesan cheese and basil leaves and serve immediately.
    Additional Notes:
Always reserve 1/4 cup pasta liquid to loosen the pasta if its thickens..
