Grilled Sweet Peppers and Pear Salad

Sweet pears and grilled sweet pepper with peppery spring mix; this salad is perfect for a lite and healthy summer lunch.

This salad is by-far one of my favorite thing to serve on side with grilled meats. Whenever we are grilling some meat or chicken for dinner or weekend lunch, I also marinate some veggies and grill on the side. Quick addition of seasonal fruit such as pear and bunch of greens! You have it! The best side salad ever!

I like to even save some grilled sweet peppers and pack same salad for lunch the next day!

In this version, I have also added, my favorite, grilled asparagus. There are no hard or fast rules. We just go by what we have in refrigerator.  You can use any combination you like. A few veggies, some fruit for daily fruit serving and greens - salad is ready!

So make it your own, grab your favorite veggies and fruit from refrigerator and make a scrumptious salad to accompany lunch or pack for lunch!

Ingredients

  • 1 Pear (seeds removed, small diced)
  • 1/4 lbs Sweet Peppers
  • 4 tbsp Pepper Jack Cheese
  • 2 Cup Spring Greens Mix
  • 1 Lemon (Juice and Zest of 1 lemon)
  • Salt and Black Pepper (to taste)
  • 1 tbsp Olive Oil
  • 1/4 lbs Asparagus
  • 1/2 Cup Almonds

Directions

  • 1. Marinate & Grill - Mix olive oil, lemon juice, zest, salt and pepper in a bowl. Add in Asparagus, and sweet peppers in marinade and leave for 10 minutes and then grill on open flame until slightly chard and crisp tender.
  • 2. Slice - Slice all veggies into bite size pieces.
  • 3. Serve - Plate spring greens and top it with grilled veggies, pears and almonds. Enjoy!!!
