Kiwi, Apple & Blood Orange Salad with Basil Sprouts

This is one of easiest and most scrumptious and healthy salad you ever put in your mouth. All of the ingredients in this yumm and gorgeous looking salad are super fruits, good for eye health, immune system and much more.

All-in-all, a power-packed lite salad, perfect for diet lunch or side lunch with grilled fish or meat.


Acidity from blood oranges and kiwi marries perfect with sweet red delicious apples and basil sprouts.

I love making various kind of sprouts at home. I will try to cover a post of how to make sprouts at home. Its easy, fun, cheaper and healthy way to enjoy these veggies power-house greens at home. However, feel free to use fresh basil leaves if you can't find basil sprouts.

Ingredients

  • 4 Blood Orange
  • 2-3 Kiwi (Use ripe Kiwi Fruits)
  • 1/2 Cup Basil (I used Basil Sprouts, you can also use Julienne Basil Leaves)
  • Salt and Black Pepper (per taste)
  • 1/2 tbsp Olive Oil
  • 2 Apple (Red Delicious Apple)

Directions

  • 1. Peel and slice blood orange, kiwi fruits and apples into thin round slices. Squeeze 1-2 slices of blood orange or peals of blood orange (if those have some pulp attached to them while peeling off) into a small bowl. Add 1/2 tbsp olive oil, salt and pepper to taste, mix well and leave aside. Arrange slices fruit in three layers on the two salad plates, top with 1/2 tbsp blood orange vinaigrette and basil sprouts. Serve chilled or at room temperature.

Basil Sprouts - Other than growing sprouts on my own, I often buy Basil Sprouts in Whole Foods and Sprouts Farmer's Market store.
