Strawberry Melon Salad with Honey-Lemon Dressing

This is one of the simplest and best melon salad which I LOVE enjoying all melon season. Oh, I mean,  summer season. :)

Seasonal melons are soon going to disappear... So I thought to enjoy few more melon dishes... while I can still find some juicy cantaloupes, honeydews, and muskmelon in market. 

Why have I made so simple melon salad? Simply because I wanted to enjoy delicious taste of fresh melons. Also, melon, mint, and lemon dressing is a classic combination which I can never have enough. Each component of this salad compliments other. Above all, nothing overpowers the sweet melon flavor.

I'm sure you wondering: why honey in dressing for an already sweet fruit salad?!

Well, honey and lemon make a very lite, sweet and sour dressing which balances the sweetness of melons. Not just that, this dressing also mellows the tartness of strawberries... making every bite so scrumptious.

PS: From past few days, I'm stuck with a major laptop hiccup. Just managed to up it for posting a recipe. I'm hoping to get back on blogging business in few days. :-) In meantime, I hope you will enjoy this simple and beautiful melon salad.

I would say, get some melons, seasonal berries, and enjoy some Melon fruit Salads while you still see these juicy, low carb fruits in farmer's market! Just so you know, this scrumptious salad is vegan, gluten free, and also nut free.

Strawberry Melon Salad with Honey-Lemon Dressing

Ingredients

  • Melon Salad
  • 2 lbs Melon (fonzy or honeydew melon)
  • 1 lbs Melon (muskmelon or cantaloupe, scooped or diced)
  • 1/2 lbs Strawberries (10 oz, thin sliced)
  • 8-10 Mint (fresh mint leaves, for garnish )
  • Vinaigrette
  • 4 tbsp Lemon (juice plus 1 tsp zest)
  • 1 tbsp Agave Syrup
  • Salt and Black Pepper (adjust per taste)
  • 2 tbsp Olive Oil

Directions

  • 1. To make vinaigrette, in a small bowl, add honey, lemon juice, lemon zest, and olive oil. Whisk to blend oil with lemon and agave. Taste and add salt and black pepper. Set aside.
  • 2. To assemble salad, cut and discard seeds of both melons. Slice melon into bite size pieces or scoop melon balls using melon scoop. Slice strawberries. Gently coat melon and strawberries in dressing. Garnish with mint and serve.
