Mexican Watermelon-Jalapeno Agua Fresca

View Recipe

Just in time for Cinco De Mayo, sharing with you, a refreshing, zippy, no-alcohol party drink which is very popular all-over Mexican vicinity by name "Agua Fesca (Spanish - Cool Waters)"

I had no plans to show up and post recipe today.... seriously...... NO plans! But this is such a drink, and the pictures I clicked were so killer, I just could not hold on to it. Not even for one more day. So, here I'm, almost at the end of day, sharing a refreshing summer drink which is my favorite way to replenish myself in summer.

During summers, watermelon is probably, THE most favorite fruit of both of us. Our every grocery trip, Vishal will pick one watermelon... no matter what I say, he will.

And what happens when you buy a big watermelon?! Tell me?

Do you eat all of it?

Me? naah.... even though, I love watermelon, but it is such a fibrous and water-filled fruit that I'm done just after a bowl full! So what do you do with rest??

I use it various ways..... sorbets, ice pops, Agua Fresca, and even curries..

Curries!?!?!? Strange!!!!?

I will stay, wait for sometime, I will share one with you :) Promise!

My last weekend went so so busy that after I posted Raspberry Shake, I thought to go for a full day break. It may sound weird to take break in just start of the week, but I have not yet recovered from my last weekend's kitchen chaos :)

I know!!! I'm sure you thinking: it was just a finger-shred and little thumb burn, why so drama?! ;) Well, well...... to add "injury to insult", I ended up burring myself AGAIN, the very same day.... still recovering from that...   Don't worry, I'm fine! Though it was a little TOO much for a day.... and I have yet not shared part of the story when insect-repellent destroyed my fries :(

I'm still saving that story for some other day......

At least, now you know why am I sharing no-cooking-drink-recipes from past two days in-a-row!? ;) ;)

Speaking of which, this drink uses very simple ingredient and can be prepared on a short-notice. So, no worries, if your guest finish the first batch in first hour of the party (or even earlier)... just keep the ingredients available, you can make it again in absolute no time!

You know, what is even more refreshing about Agua Fresca?! It stays good for up to 4 days in refrigerator! So, you can even make it ahead of the party or keep a few batch ready in refrigerator for those extra-lavish guests.

And did I mention, Agua Fresca is Healthy too? It pure watermelon, lime and little bit of agave syrup. Agave, you can also skip, if you find super-sweet seasonal watermelon. I would say - adjust per taste. If you don't have agave, use honey or raw sugar will be okay too. Other than being packed with antioxidants, and vitamins, this drink is also vegan, pure gluten free, paleo, and alcohol-free. For kiddo version, I suggest to skip the jalapeno. Even though kick of jalapeno is very subtle, just a little hint at the end of each sip, but not good for kids..... adults, however, will love it!!

I'm sure this zippy drink will bring lots of freshness to your party!

Now, the special part! the pictures, which forced me to share this recipe with you!!!

Look at cooooolor my friends!! Ah.... does it look refreshing to you? Because I'm gushing looking at the pictures! oh... my my! This is yet another reason I fell for Mexican Cuisine! colorful...... vibrant..... scrumptious... refreshing....

Cheers Everyone!

Have a great day!

Ingredients

  • 2 lbs Melon (watermelon, about half of medium size watermelon, 5-6 cups when diced)
  • 1/4 Cup Lime (juice, about 2 limes, or more per taste)
  • 1/2 Jalapeno (seed, stem removed. Optional if prefer no heat)
  • 2 tbsp Agave Syrup
  • 1/4 tsp Salt (adjust per taste)
  • 1.5 Cup Water (filtered)
  • Mint (for garnish, optional)

Directions

  • 1. Remove skin of water melon and dice into cubes. Add to blender or food processor with jalapeno seeds and stem removed. Blend until smooth.
    Additional Notes:
You can use more or less jalapeno as per liking. The amount I have added just gives a subtle heat at end of each sip.
  • 2. Strain the mixture to remove all fiber. Discard fiber.
  • 3. Mix agave syrup, salt, lime juice into the watermelon juice. Mix well. Taste and adjust lime juice, salt, or agave per liking. Pour over ice into serving glasses. Garnish with mint leaves and jalapeno (optional). Serve chilled and enjoy!!
