Berry Chia Pudding is quick and healthy dessert. I have used Almond milk instead of reqular dairy and Mango puree as sweetener instead of sugar or sweetened milk. Sweetened milks are very high in fructose contents, so I always recommend my viewers to use Agave syrup or other natural sweeteners like honey/Jaggery. Also, Chia seeds do not require any cooking, just soaking in water will give great texture to pudding. So try this healthy and skinny dessert alternative to heavy ice creams or egg based pudding and live healthy.

Ingredients

  • 1 and 1/2 Cup Almond Milk (unsweetened)
  • 2 tbsp Chia Seeds (Soaked in 1/2 cup water for 1-2 hr)
  • 1/2 Cup Black Berries
  • 1/2 Cup Raspberries
  • 5-8 Almonds (for garnish)
  • 2 tbsp Mango (Puree or Agave syrup as sweetener.)

Directions

  • 1. Mix soaked Chia seeds with 1/2 cup milk and stir well to separate all seeds.
    Additional Notes:
    Chia seeds tends to develop gelatinous coating and glue together, so it is important to stir them with small amount of liquid before adding to pudding or pudding will have lumps of Chia Seeds
  • 2. Combine almond milk, Agave or mango puree (per your liking) and Chia seeds in bowl and mix well. Now add almonds, washed berries. Serve chilled or at room temperature.

Savita's Recipe Notes:

Soak Chia in water and keep handy in refrigerator for 24 hrs, that way you can add Chia to yogurt or shakes and enjoy good health. Add a tablespoon of soaked Chia Seeds in glass of water to keep you hydrated all day.
