Whenever I eat 'Chalupa' from Taco Bell, it reminds me of an Indian North Region Staple Bread - Bhaturas. If you look at the picture, they both look so alike and they taste alike a lot too.

Bhatura is leavened fried bread, very famous in north India, especially in Punjab. It is so readily available in the food joints everywhere that no one makes it at home. Mostly, people make Chole (Chickpea Curry or Chana Masala) at home and buy bread from market.

I have had - Chlole Bhutre - thousand times in my life but I can never get enough (always longing to have one more time). It is not easy to find this North Indian specialty easily in States. So, I decided to make authentic Indian style version at home today for Pooja (Idol Worship)

Ingredients

  • 1 & 1/2 Cup All-Purpose Flour (All-Purpose Flour Or use ½ cup whole wheat and 1 cup all-purpose flour)
  • 1/4 Cup Semolina (flour)
  • 1/2 tsp Baking Soda
  • 1 tsp Sugar
  • 1/2 Cup Yogurt
  • 1/2 tsp Salt
  • 1/4 Cup Milk (mixed with 1/4 cup water)
  • 1/2 tsp Poppy Seeds (Optional)
  • Canola Oil (for frying)

Directions

  • 1. Make Dough - Mix all dry ingredients in a mixing bowl.
  • 2. Add yogurt and slowly add water mixed milk, little at a time to make firm dough.
  • 3. Let dough rest for at least 1 hr.
  • 4. Roll – Make 8-10 equal size balls from dough. Roll using rolling pin on a board dusted with all-purpose flour to make 8-10 flat breads.
  • 5. Fry – Heat 3 cups of oil in a deep frying pan. Add rolled bread one by one and fry till puffed. About so sec to 1 minute each side.
  • 6. Serve – Serve with Punjabi Chole (Chickpea Curry) and mint yogurt chutney on the side.

Savita's Recipe Notes:

Traditional Bhatura Dough is fermented using yeast day before making'em and usually made with only all purpose flour. However, I have used a quick approach of adding Baking Soda for leavening and semolina flour for little crispy texture.
