Warm Swiss Chard Salad with Peppery Dressing

This fall salad can be served warm or at room temperature. This is my special way to feed veggies to my family. Paring veggies with some nice, tangy and lite dressings elevates their taste and whole family enjoys tasty delicious salads (without need to manage picky eaters).

Swiss Chard is one of my favorite green and today I paired it with peppery and tangy sour cream to make delicious filling and vitamin loaded salad. Worth to mention that black pepper also has good health benefits, try using black pepper as much as you can in place of processed peppers. Ready in 10 minutes, this salad is a winner in every aspect – taste, ease and above all good health.

Warm Swiss Chard Salad with Peppery Dressing

Ingredients

  • 1 Swiss Chard (1 bunch of Swiss or Rainbow Chard)
  • 2 tsp Black Pepper
  • 1/2 Cup Sour Cream
  • 1 tbsp Lemon (Juice)
  • 1/2 tsp Salt

Directions

  • 1. Bring a large pot of water to boil. In meantime, slice stems of swiss chard s into bite size pieces and also slice the swiss greens and keep separate. Blanch swiss greens in hot water for 5 minutes and then rinse in cold water. Squeeze out extra water from greens and set aside.
  • 2. Heat oil in a pan, add swiss stems and saute for 2 minutes. Add greens and continue saute for 2-3 minutes, season with 1/4 tsp salt and 1/4 tsp pepper. Remove from heat and set aside.
  • 3. In a small serving bowl, blend sour cream, lemon juice with 1 tsp black pepper (reserve rest to sprinkle on the top), 1/4 tsp salt (adjust per liking) .
  • 4. Transfer warm greens into serving plate and drizzle peppery cream over it. Serve warm or at room temperature. Enjoy with grilled meats or roasted fall vegetables on the side.
