Vegan Soy Meal Stuffed Flat Bread is a healthy and filling Indian breakfast bread. This flat bread is especially good breakfast for growing kids, an excellent way to feed their growing body lots of protein and whole grain. My family do not mind having it for lunch too with some plain or seasoned yogurt. I have used whole wheat flour to make the dough and soy granules (meal) for the filling. You can find Soy Chura Or Granules easily in Asian or Indian markets. If granules are not available, you can buy Soy Nuggets and pulse them in food processor to change it to meal or fine chunks.

Ingredients

  • 1 Cup Soy Chura (Minced Dry Soy granules available in Asian markets )
  • 2 Cup Wheat Flour
  • 2 tsp Salt
  • 1/2 tsp Red Pepper Powder
  • 2 tbsp Cilantro (chopped)
  • 1/2 Cup Red Onion (fine chopped)
  • 1 Cup Tomatoes (fine chopped)
  • 1 tbsp Garam Masala
  • 1 tbsp Coriander Powder

Directions

  • 1. Soak Soy Chura (granules) in 3 cup warm water mixed in 1 tsp salt and set aside for 10 mins. Heat oil in a pan, add onion, garlic and saute till onion are slightly brown. Add tomato, 1 tsp salt, all spices listed above and fry till oil separates (about 7 mins).
  • 2. When soy cools down and is easy to handle. Squeeze out excess water from Soy and

    Drain soy in clean running water once or twice if smell of soy bothers you.
  • 3. Now add soy to the tomatoes and onion mixture and fry till moisture in soy evaporates (about 7 minutes). Set it aside to cool down, in meanwhile make dough as per instructions in ingredient list.
  • 4. Divide dough into 6 equal balls. Dredge each ball in dry wheat flour to avoid sticking to board or hands. Roll each ball to 2-3 inch circle. Place two tbsp of soy filling (filling should be room temp. to touch) in the center. Fold the filling in dough and close it like you make a dumpling.
  • 5. Heat an iron or heavy bottom flat skillet. Roll the stuffed dough ball to make flat bread of about 6 inches diameter. Place the flat bread on heated skillet, spread 1 tsp oil each side and sear it for 2-3 minutes on each side.
  • 6. Repeat it for all remaining stuffed dough balls. Soy Vegetarian Flat Breads are ready, serve hot with Yogurt Raita or Masala tea.

Savita's Recipe Notes:

  1. Make a soft dough by mixing together Wheat flour  (2 cup), 1/2 tsp salt and water (1 cup). Dough should neither be sticky nor firm.
