Ingredients

  • 1 lbs Chicken (drumsticks, skin removed)
  • 1/4 Cup Coconut milk
  • 8 Cardamom (crushed green cardamom pods)
  • 3 tbsp Canola Oil
  • 2 tsp Salt (or as per taste)
  • 1 tsp Salt and Black Pepper (to season the chicken before frying)
  • 1 tbsp Garlic (Paste)
  • 1 tsp Ginger (Paste)
  • 3 tbsp Cilantro (Chopped)
  • 1/2 Cup Red Onion (Or white onion sliced in half moons)
  • 1/4 tsp Sugar
  • 1/4 tsp Garam Masala
  • 1/2 Cup Tomato Sauce (I often use Hunts Tomata Sauce or Tomato Puree)
  • 1 tsp Red Pepper Powder
  • 1/2 tsp Turmeric

Directions

  • 1. In a bowl, combine crushed Cardamom Pods and Coconut milk. Set aside.
  • 2. Season skinless drumsticks with salt and pepper. Heat 2 tbsp oil in a deep sauce pan and fry drumsticks till light brown from all sides. Remove and set aside.
  • 3. In same pan, add 1 tbsp oil, fry onion, sugar and garam masala till onions are light carmelized.
  • 4. Add Red Pepper, turmeric and fry for 1/2 minute. Add chicken back to the pan and cook for 5 minutes. Add little water if it sticks to the bottom of pan.
  • 5. Add tomatoe sauce (mixed in 1 cup water), salt, ginger and garlic paste. Cook on low heat till oil separates.
  • 6. Add coconut milk, cover and cook on low heat till chicken is fully cooked.
  • 7. Garnish with fresh chopped cilantro and serve hot with your choice of Naan Or Chapati.

Hi @khilna, for cardamom, recipe is referring to green cardamoms. Tomato sauce is not ketchup, I generally use canned Hunts Tomato Sauce. You can replace Tomato Sauce with 1/2 cup Pasta Sauce too. Tomato ketchup will be too sweet for this recipe, however, if you have Tomato Paste Concentrate, then mix 3 tbsp in 1/2 cup warm water for recipe.
