Ditalini Pasta in Tomato and Shallots Wine Sauce

Ditalini Pasta in Tomato and Shallots Wine Sauce
Total Time Prep Time Cook Time Difficulty Easy Yields 2 Servings Serves 2

Ingredients

  • 1/2 lbs Pasta  (Small Semolina Pasta, like I used Ditalini Pasta)
  • 2 Tomatoes  (two ripe Roma Tomatoes)
  • 1 Shallot Onions  (1 medium size shallot)
  • 1/4 Cup White Wine
  • Salt and Black Pepper  (as per taste)
  • 1 tbsp Olive Oil
  • 1/4 tsp Red Pepper Powder
  • 2 Garlic  (garlic cloves fine minced)
  • 2-4 tbsp Parmesan Cheese  (fine grated for serving)
  • 1/2 tsp Italian Seasoning

Directions

  • 1. Cook Pasta - Heat 2 liters water in a wide deep pot, when water starts boiling, season water with salt and cook pasta as per package.
  • 2. Make Sauce - While pasta is cooking, in a pan, heat 1 tbsp oil, add shallots, garlic and cook until shallots are translucent. Don't let garlic burn. Add fine chopped roma tomatoes, Italian seasoning and red pepper powder. Saute till tomatoes skin loosens and pulp has disintegrated. Add white wine, 1/4 tsp salt and 1/4 tsp black pepper (or taste and adjust salt). Simmer for 3 minutes and remove from heat.
  • 3. Drain pasta and add to the sauce. Mix well and serve topped with some Parmesan Cheese.
