WHAT IS BLEU CHEESE (BLUE CHEESE) DRESSING?

Bleu Cheese or Roquefort Cheese is very often refereed as "Blue Cheese". It is an aged Cow's milk cheese with delicious blue-green mold (good for you) running through it. Gorgonzola and domestic bleu cheese are my favorite bleu cheeses. 

Bleu cheese dressing is a popular creamy salad dressing (or dip) prepared by blending blue cheese with thick and creamy ingredients such as butter milk, yogurt or sour cream, and mayo. The resulting dressing is thick and creamy with chunky bleu cheese running through it. This makes same dressing perfect as Salad Dressing as well as Dip (dipping sauce).

Please note: For brevity, I'll refer Bleu/Roquefort cheese as "Blue Cheese" for the rest of the post.

WHAT IS IN BLUE CHEESE DRESSING?

Homemade Blue Cheese Dressing is simple blend of 6 ingredients. Blue cheese, mayonnaise, butter milk, sour cream or thick strained yogurt, lemon juice, and green onion. (salt and pepper on the house)  Blue Cheese is one important ingredient (I'm sure you guessed it) For best result use good quality blue cheese such as Gorgonzola.

For more depth of flavor, I add one more ingredient in blue cheese dressing - one clove of garlic. One small clove goes long way. For me, it makes this dressing extra special. I highly recommend trying.

WHAT MAKES THIS BLUE CHEESE DRESSING SPECIAL?

First, the ingredients I described above make this dressing delicious. You will love this flavor combination. 

Second, it is is important how you make the blue cheese dressing makes a lot of difference in it's flavor. For most flavorful dressing:

1) Blend half of the Blue Cheese with other dressing ingredients in blender. The blended blue cheese with mayo, sour cream, butter milk add real blue cheese flavor in each spoonful of dressing. Tastes real good.
2) Don't skimp on amount of blue cheese. This is key to a best tasting Blue Cheese Dressing. Use good quality and good quantity of cheese as described in the recipe card.

Other ingredients in this dressing can be changed and adapted to your personal diet preferences.

TIPS TO MAKE BLUE CHEESE DRESSING YOUR OWN:

1. Egg-free Dressing
To make dressing egg-less, replace mayonnaise with egg-free vegan-naise.

2. Vegetarian Dressing
For vegetarian blue cheese dressing, use vegetarian blue cheese and replace mayonnaise with egg-free vegan-naise.

3. Low Fat Dressing
Use low-fat ingredients for a low-fat dressing. e.g. use thick strained low-fat yogurt(common available as Greek Yogurt). Please do NOT use plain/watery yogurt for this recipe. That said, you can replace Greek Yogurt with low-fat sour cream.

In-short, nothing beats a homemade blue cheese dressing. You can use freshest ingredients to blend a bold flavor dressing. 

BLUE CHEESE DRESSING FOR KETO DIET

Blue Cheese dressing is perfect fit for Keto Diet. Dressing is gluten free and has no added sugar. Feel free to make a batch and enjoy with your favorite keto snack. I recommend serve on side with my Keto Jalapeno Poppers. (Yumm!)

HOW TO MAKE BLUE CHEESE DIP?

This recipe for blue cheese dressing can also be used as Blue Cheese Dip. It is thick, creamy with and little chunky with crumbled blue cheese mixed in before serving. I find it perfect to serve as Dipping Sauce.

Honestly, Blue Cheese Dip Sauce and Ranch Sauce are, by-far, our favorite dips to serve with game-day snacks such as Buffalo Chicken Wings, French Fries, Pretzels, Jalapeno Poppers and spoons. ;)

Tip: For smooth dressing, you can blend all of the blue cheese. For chunky dressing, only add half when blending and mix rest later.

HOW LONG DOES BLUE CHEESE DRESSING LAST IN THE REFRIGERATOR?

It stays good in refrigerator up-to 3-4 days. Make sure to store in seal-able, air-tight container.

I love whipping a batch over the weekend and use a couple of times in week for salad dressing, or serving as quick dips for snacks.

WHAT TO SERVE WITH BLUE CHEESE DRESSING:

Serve dressing as dip with you favorite snack, or raw vegetable platter.

Ingredients

  • Blue Cheese Dressing
  • 6 Oz Blue Cheese (crumbled, divided)
  • 1/2 tsp Black Pepper
  • 1/4 tsp Salt (adjust to taste)
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Yogurt (Greek yogurt (See Note 5))
  • 1/4 Cup Butter Milk
  • 1 tbsp Lemon (juice)
  • 1 Garlic (clove)
  • 3 tbsp Green Onion (green and white of one scallion, more for garnish)

Directions

  • 1. In blender or food processor jar, add all ingredients with half of crumbled blue cheese (3 ounce, about 6 tbsp). (See Note 1)
  • 2. Pulse until smooth. If dressing appears hard to blend, eye-ball 1-2 tsp of water. Don't add too much water as it will dilute the dressing consistency.
  • 3. Mix in remaining blue cheese (crumbled). Don't pulse again. Transfer to a jar with lid. Taste and adjust salt. (See Note 2)

This dressing was delicious as a dip for spicy chicken wings and I also used it for a cobb salad instead of the classic ranch dressing. So good!
