Rhubarb Syrup Summer Drink

Rhubarb is considered to be a vegetable in some parts of world but in United States, it is considered a fruit and is typically made available at consumer markets in early spring. Due to Rhubarb's beautiful reddish-pink color, it is used as base in varieties of drinks, jams and jellies. I am sharing with you a very easy Rhubarb Orange summer cooler mocktail. You can make this syrup in advance and just before serving, mix with sparkling or plain water to make perfect summer drink for kids. Or add some Vodka or Orange Liquor for an excellent sweet and tangy cocktail.

  • 2 lbs Rhubarb
  • 2 Oranges (Juice of Large Navel Oranges)
  • 1/4 tsp Salt
  • 2 Cup Water
  • 1/4 Cup Sugar


  • 1. Wash and slice the Rhubarb stalks into 1 inch size cubes. Discard the leaves if any. Juice oranges; we need about 1 cup for this recipe.
  • 2. In a stainless steel deep pan, add Rhubarb, orange juice and water. Bring to boil, add sugar and salt then simmer for 15-20 minutes till the sliced stalks are soft.
  • 3. Strain the syrup. Discard the pulp and fill the remaining syrup in clean sterilized jar. Keep refrigerated. Just before serving, mix 4 tbsps. of Rhubarb Syrup with 1.5 cups of sparkling water or plain water to make perfect refreshing sweet and tangy summer cooler.

Savita's Notes:

This syrup keep fresh in refrigerator for up to 2 week. Sometimes, I freeze it into Ice Cubes after mixing some water and then use these pink tangy cubes to flavor water or any sweet drink.
