Sometimes certain recipes are as easy as 1-2-3 and this grape and lentils salad is one of such recipe. Other than cooking the lentils till they are just tender (which requires almost no attention), you just need to toss in desired vegetables or fruits and lentil salad will be ready to rock.

Lentils also happen to be a powerhouse of nutrition - good source of proteins and gluten free, a handful of lentils are perfect for rounding out a soup or making a salad just a little more filling.

I have used Brown lentils for this salad because they hold their shape well after cooking. So think of them for soups, salads and side dishes. Try combining various flavor combination with brown lentil as neutral base like feta, cucumber and lentils or kimchi, radish, onion and lentils; dress with some lemony dressing and salad is served. In my home, we love lentil salads for lunch ā€“ filling, wholesome and satisfying.

  • 1. Cook Lentils - Place the lentils in a colander or sieve, and rinse with cold running water. In a large saucepan, combine 3 cups of cold water, 1/2 tsp salt and lentils. Bring to boil, reduce heat and simmer, partially covered, until just tender about (20-25 minutes). Drain any excess cooking liquid and leave lentils aside to cool down. Additional Notes: I often cook some extra lentils while making soups and use it for this salad next day. Or cook lentils at night, make salad when lentils are cool to touch (almost room temperature)
  • Step for Recipe - Grapes and Brown Lentils Salad 2. Prepare Veggies - In a bowl, add chopped tomatoes, white onion, cilantro, grapes (halved). Add lemon juice, salt, pepper and mix well.
  • Step for Recipe - Grapes and Brown Lentils Salad 3. Serve - Mix in room temperature cooked lentils, toss to combine and serve at room temperature or after chilling in refrigerator for 20-30 minutes.
