
Zucchini and Peppers Grilled In a Foil
Easy Vegetarian Grilled Side
I am sharing with you an easy vegetarian side recipe for grilling in foil. Just slice, wrap and forget, when your guest arrive, take the packages out of fridge, let'em come to room temperature. Simply grill'em on little less hot area of the grill for 10 minutes and let your guests season and enjoy fresh grilled veggies with whatever meats you are grilling. And guess what, clean up will be easy too, just trash the used foils and your are done.
Zucchini and Peppers Grilled In a Foil

Ingredients
- 1 Zucchini (diced into big bite size pieces)
- 1 Cup Cherry Tomatoes
- 1 Bell Pepper (1 yellow bell pepper)
- 6-8 Capers (Caper Berries)
- Salt and Black Pepper (salt and pepper to taste)
- 1 tbsp Lemon (Lemon juice)
- 1 tbsp Olive Oil
Directions

1. Slice - Slice zucchini, bell pepper into bite size pieces. Divide veggies among two square sheet of aluminum foil, top with ½ of cherry tomatoes on each. Drizzle ½ tbsp. oil, pinch of salt and black pepper and few caper berries.

2. Seal - Seal the foil to make small purses. This is a perfect make ahead and no utensil vegetarian recipe. You can refrigerate these purses to grill’em in the evening or take’em outdoor or pre-prep for individual serving for grilling party.

3. Grill and Serve - Just before serving, grill purses for 10 minutes, watch your face from escaping steam when you open’em. Season with little more salt, pepper and ½ tbsp. lemon juice and serve.
