Fennel and Apple Salad with Grapefruit Vinaigrette

Ingredients
- 2 Apple (Golden Delicious Apple)
- 2 Fennel (bulbs fine sliced and leaves for garnish)
- 2 Grape Fruit
- 2 tbsp Olive Oil
- Salt and Black Pepper (per taste)
- 5-10 Basil (leaves of basil or mint)
Directions

1. Cut skinless grapefruits slices and squeeze the remaining pulp attached to the skin to yield about 1-2 tbsp of grapefruit juice in a bowl. Add olive oil with grapefruit juice and whisk together to make emulsion. Season with salt and black pepper per taste. Slice apple, fennel bulb thinly and arrange on salad platter. Top with grapefruit slices, fine chopped fennel leaves and basil. Drizzle grapefruit vinaigrette and serve immediately.
