
Refreshing Green Cucumber, Avocado, and Lime Cooler
With Special Touch of Star Fruit (Carambola) for St. Patrick's Day
This delicious, vibrant and silky green drink challenges its own name and is packed with promise of health, healthy fats, freshness and taste. Perfect for a hot summer lunch, a cooling glass of avocado, cucumber, lime and star fruit smoothie will make day refreshing and specifically when its St. Partick's Day weekend, this drink will perfectly fit in.

Star fruit or Carambola was a nice taste addition to creamy avocado and cucumber melody. I choose these flavors to give you a nice and refreshing drink for St. Patrick's Day.

You can add some ice and sparking water to make it more appealing to kids.
Or
you can add some extra chopped cucumber and star fruit in it and then serve it chilled in mason jars as cucumber-avocado gazpacho.

Refreshing Green Cucumber, Avocado, and Lime Cooler

Ingredients
- 1 Cucumber (remove skin, rough chopped, save 2 slice for garnish)
- 1 Avocado
- 6-8 Mint (mint leaves)
- 1 Lime (zest and juice of 1 lime)
- 1 Star Fruit-Carambola (remove seeds, rough chopped, save 2 slice for garnish)
- 1/4 tsp Salt
- 1/2 Cup Water
Directions
-
1. Add water to blender jar followed by all ingredients mentioned in the ingredient list. Blend at slow speed till all ingredients are crushed then increase speed to make a smooth emulsion. When done to your liking, pour in glasses, garnish with one cucumber and one star fruit slice each (optional) and serve immediately
