Layered Griddle Fried Flat Bread – one of the most loved flat bread in India, famous as Parantha ( that is Griddle Shallow Fried Flat Bread). Layered bread has artistic layers that separate or flake out once flat bread is shallow fried. Whole wheat flour is used to make the dough and different techniques are used in different parts of country to make famous layers - Latchas. Before rolling, bread is usually seasoned with salt, a thin spray of oil and few other spices. Once rolled and fried, bread separates in layers due to oil film inside and become crisp from outside. I have tried to capture all important steps to make a perfect layered bread. Give it a try and enjoy this piece of art.

  • Step for Recipe - Layered Griddle Fried Flat Bread 1. Make a soft dough by mixing together Wheat flour and water. Dough should not be sticky or firm.
    Step for Recipe - Layered Griddle Fried Flat Bread 2. Make round balls of dough (of size that easily fit in your palm). Using roller stick, roll ball into a small round flat circle. (Use dry wheat flour to stop sticking of dough to Roller Stick Or your hands). Put a cut in half of the circle (as shown in picture).
  • Step for Recipe - Layered Griddle Fried Flat Bread 3. Spread little oil/ghee on exposed side of circle and sprinkle salt and pepper per taste. Roll the dough as shown in picture.

  • Step for Recipe - Layered Griddle Fried Flat Bread 5. Heat a iron griddle Or Pan , put one flattened Parantha on griddle and let it cook for 1-2 minute. Turn the other side and leave for another 1-2 minutes. Apply some ghee/oil and turn again. Let the Parantha crisp a bit in ghee/oil.
