Ingredients

  • 1/2 lbs Red Plums
  • 1 Spring Greens Mix (Use 1 standard packet spring or bitter greens mix)
  • 1/2 Cherry Tomatoes (1/2 pint)
  • 2 Apple (Red Delicious Apples)
  • 2 tbsp Parmesan Cheese (Shaved Parmesan or Crumbled Goat Cheese)
  • 4 tbsp Orange Juice (Juice of 1/2 orange)
  • 1/2 tsp Salt and Black Pepper
  • 1 tbsp Olive Oil
  • 1/4 Cup Walnuts
  • 1/4 Cup Almonds

Directions

  • 1. Slice the fruits - apples and plums into 1-2 inch pieces. In a bowl whisk together orange juice and olive oil to make emulsion. Empty greens into a large bowl, add vinaigrette and toss well.
  • 2. Add dressed greens to individual plates, top with fruits, walnuts and almonds. Crumble cheese at the top and sprinkle salt and pepper. Serve and enjoy ruby red delicious apple, plum and walnut salad.
