Potato Salad with Creamy Potato Salad Dressing

LOADED POTATO SALAD

This salad is no ordinary boiled-potato salad. It is loaded with crunchy fresh ingredients which will make even a picky eater love this potato salad. To make salad loaded and delicious, I combined classic Tex-Mex ingredients with this salad.

You have plenty of options. I used black beans, corn, red onion, cilantro, and tomatoes. You can also add celery, red radish, and even fruit such as pineapple, apple or grapes. Sweetness of fruit will compliment spicy salad dressing very well.

To tie it all together, I serve Corn Tortilla Chips on the side. The flavor of corn tortilla, creamy mustard-chipotle dressing, and crunchy veggies make this Potato Salad over-the-top delicious. One of my most-requested, the best Potato Salad recipe ever!

BEST EVER POTATO SALAD DRESSING:

Like I always say, a salad makes a dressing. A best potato salad needs a best salad dressing! This dressing recipe combines classic mustard potato salad flavor with heat of chipotle, garlic, and sweet-tart Greek yogurt. 

Creamy Potato Salad are known for signature creamy texture which mostly means mayonnaise based dressing. This Potato Salad uses mayonnaise. But I make this a healthy Potato Salad Dressing by replacing half of mayonnaise with Non-Fat Greek yogurt. The Greek Yogurt helps dressing three ways:

  1. Keep Potato Salad dressing lite and healthy.
  2. Creamy even with less mayo.
  3. and add delicious tangy flavor. 

That said, you can also make this salad Mayo-free, or Dairy-free, or Vegan by replacing one of the two or both as follows:

  1. Mayo Free - Make Potato Salad mayo free by replacing all mayo with low-fat Greek yogurt. Only use Greek yogurt for this recipe. Consume yogurt based salad the same day.
  2. Dairy Free - Make Potato Salad dairy-free by replace all of yogurt with mayo. Use good quality olive-oil mayo. You can also replace both with mayo substitute such as Veganaise for a Vegan Potato Salad. 

I also recommend to try my extra-creamy Potato Salad which needs no kind of mayo. 

Loaded Potato Salad with Mayonnaise Yogurt Dressing

HOW TO MAKE POTATO SALAD:

A good tasty Potato Salad needs perfectly cooked potatoes. I love new potatoes for making salads. These are younger potatoes, have low starch content and stay crisp which is perfect for salad such as this Loaded Potato Salad.

To cook potatoes for Potato Salad, I start by dicing the new potatoes to large bite-size pieces. You can also cut potato in larger quarters. I prefer size which you can east with fork as well as scoop with tortilla chips. I cover potatoes with cold tap water and leave to boil until knife tender. About 12-15 minutes. It may take a few minutes longer. Keep an eye last few minutes. Don't let potatoes turn mushy.

To make Potato Salad dressing which stays creamy and fresh longer, make sure to drain any water hanging on top of Greek yogurt. Also, only add salt just before serving. (Always adjust seasonings to taste.)

Once potatoes are cooked and dressing is ready. I mix the two. It is good to mix warm potatoes with dressing. This way potatoes absorb lots of flavor and salad tastes even better.

Directions

  • 1. Scrub potatoes clean. Dice into big bite size pieces. Place in sauce pan with plenty of water to cover the potatoes. Add 1/2 tsp salt. Boil for 12-15 minutes or until potatoes are knife tender but not mushy.
  • 2. To make Potato Salad Dressing, in a wide large mixing bowl, add all of the dressing ingredients - mayonnaise, yogurt, minced garlic, minced chipotle, Dijon mustard, lime juice (or vinegar if using), hot sauce, 1/2 tsp salt, and 1/4 tsp of black pepper. Mix well. Taste and adjust salt and lime juice.
  • 3. To assemble salad, add warm potatoes (boiled and drained) into the bowl with dressing, followed by rest of salad ingredients - red onion, green onion, cherry tomatoes, black bean, corn, and cilantro. Gently mix to coat everything in dressing sitting at the bottom of the bowl. Taste and adjust salt and lime juice.
  • 4. Transfer to a serving bowl. Garnish with more cilantro, sliced green onion. Serve with side of tortilla chips and lime wedges. Enjoy!
