Today, I decided to share give chicken some break and share with you round up of few of favorite vegetarian vegan dinner recipes. These dinner I have not just shared on blog, but are very regular in my weekday menu.
We love vegan dinner for weekdays. Or I should say, vegan and easy to cook. Even though we are not vegetarian/vegans but a few days in week we don't eat meat and follow a vegetarian regime. Most of Indian every-day curries are not just vegetarian but also vegan too. So, this regime helps us keep our health-goals in check and I got share healthy load of recipes with you. :) Not just curries, I even make pastas and grilled vegan dinners with hearty veggies like soy tofu, chickpeas and cauliflower.
Most of these dinner ideas are easy to prepare, a few also freeze pretty well. I have included a comment next to the recipe, sharing important tips to make homemade weekday dinner even more easier!
Note: One or 2 of recipes below use yogurt (not vegan) or honey, as condiment or as cream-substitute. For complete vegan meal, replace yogurt with vegan alternatives such as coconut cream, cashew cream or vegan almond yogurt. Replace honey with agave syrup.
